Our Grappas are a delicate distillate of grape pomace from our Estate vineyards in Paso Robles. Pomace, or marc, is the grape skins and seeds remaining after grapes have been pressed of their juice or wine. The pomace is rehydrated or fermented into a base wine which is then distilled through our copper hybrid column pot still.

Great care is taken during the distillation to capture the beautiful aromas of the Moscato grape while removing unwanted compounds that are harsh, resulting in a floral spirit with a clean finish.
